Why do we get eggcited about pheasant eggs?

They are high in protein, amino acids and vitamins B and D. Protein builds and repairs muscles. Amino acids help regulate mood, sleep and appetite. Vitamins B and D strengthen the immune system and contribute to energy and bone health.

What's not to love about pheasant eggs?!

Pheasant eggs are the eggiest of eggs. They are much richer than chicken eggs and taste delicious poached, fried, hard or soft boiled added to salads. What's more they look classy, with either an olive green or rich brown shell.

Although eggs from pheasants are rich in flavour, they are smaller in size than a chicken egg, so you might prefer to use two pheasant eggs for every one chicken egg when cooking.
