Our Butchery

We have built a modern butchery approved by the Food Standards Agency on our farm estate - to prepare and process our game and meat. All our animals enjoy the highest quality of life roaming the local landscape and their welfare is of paramount importance to us. But, for us, it’s not just about great tasting meat. It’s about creating a sustainable food system - delivered fresh to your door.

Like our customers we care about the nutritional benefits derived from free-range, grass-fed and wild meats. Our high-welfare animals roam and graze the South Downs countryside for a totally balanced and natural diet.

All of our meat and game comes from either our own farm estate or from neighbouring and local farms. Our motto at Hill Ash is 'really local, really loved'.

We employ and train staff from a local catchment area who share our passion of animal welfare and sustainability. All our meat is hand-butchered and packed by our in-house team using our ‘field to fridge’ ethos.

We distribute local produce to pubs, restaurants and the local public within a 40 mile catchment area using our chilled vans to ensure the quality of our products.

Our estate is also home to a wide variety of native game species, these include:
